Simple Gardening ~ 4 Methods to Get You Growing


I enjoy gardening.  I used to say I loved it, but if I'm honest, I love the idea of gorgeous gardens filled with flowers, fruits, vegetables, and herbs all growing with exuberance in neatly weeded garden beds connected by intertwining pathways, gates and rose covered arbors.  Lovely thought, but for someone who lives in an area with crazy weather patterns (drought or floods) and scorching summers ... someone with limited time and energy, and who also lives in a church parsonage- this beautiful, bountiful garden dream is simply that, a dream.  "Someday", I tell myself ... but honestly, I'm not certain I would invest the time and energy required to create my 'dream garden' even if all the other factors were in my favor.  Simple gardens are more my style and much more practical for my life.

 Below are my recommendations for methods for simple gardens that can be used in a variety of situations:
  • Square Foot Gardening- Mel Bartholomew's famous square foot gardening method works well for people like me who are overwhelmed with large areas of tilled soil and need small manageable garden spaces.  I prefer the 4x4 beds.  They are large enough for growing an assortment of plants, but small enough not to be confusing to plant and maintain.
  • Sheet Mulching- This is a good no-dig method for starting a garden.  I like combining small raised 4x4 square foot beds with sheet mulching to create fertile, easy to maintain garden beds.  Sheet mulching can be less expensive than filling beds with the soil mixture recommended in the square foot method, and if you collect kitchen waste, leaves and other compostables, it is quite frugal.  
  • Ruth Stout Method- I love the idea of Ruth's No Work Gardening method, but I haven't fully implemented it in a garden, yet.  I do use a thick mulch around my plants when they are established which helps greatly with water conservation and weed control. If I ever plant another large 'in the ground' garden, I will do it Ruth's way!
  • Container Gardens- You can grow almost anything in a container, even fruits and vegetables that you would normally consider needing more space will thrive in the right container.  I have citrus trees in pots and grow a variety of vegetables and herbs in various pots on the back porch.  I love the portability of container gardens.  If something is getting too little (or in my area, too much) sun, a container can be moved to a sunnier or shadier spot easily.  This is my all-time favorite way to garden.  Simple, portable, and doable in almost any situation.  Find a container, fill it with soil, put in a plant or a few seeds, water, and wait for it to grow! 

I hope these methods encourage you to plant a garden of your own.  There are few things as satisfying as snipping flowers and herbs or gathering the makings of a meal from your very own garden, be it a large in-ground plot or a variety of containers on the back patio.  I think I do love gardening; I just have to do it my way- the simple way!

Word for 2017 ~ Freedom


My word for this year chose me.  Actually, Freedom pursued me.  
In books and blog posts, sermons and song lyrics, it kept shining forth in so many places I dared not take notice.  

And of course, since I asked for a word and waited for it to find me- it is exactly what I need.  
Really, who among us doesn't need a little freedom somewhere in their life?
  
I have a whole list of areas where I plan to choose Freedom-

Free from expectations- my own as well as other people's.
Free to say No when it is the right thing for me, and free to say Yes! when I want to.
Free to live and love my life and let others think and say what they may.

More about those and others on my list soon.  But for now, how about you?

Welcoming Winter


Warm wishes on this 1st Day of Winter!
I pray you are warm and cozy and doing what brings joy and delight to your soul.

I am sorting Christmas gifts and making last minute gifts and goodies today-
tub teas, bath salts, dream pillows and such.

Tomorrow is baking day- Merry Molasses  Cookies, Scotch Shortbread, and Ginger Cookies for certain.  I have a few other ideas ... we shall see what comes about.

*Tea is always a great choice. I had a giant cup of Ceylon tea this morning- a gift from a beautiful Sri Lankan friend.

Simple Christmas Sugar Cookies



I've been making the same Christmas cookies for years.  These Sugar Cookies are one of our yearly traditions. They are simple to mix up, chill, cut out and bake; and if you so desire ... decorate.  
The cookies in the photos were baked and decorated by my daughter, which is why they are lovely and decorated nicely.  Mine often don't look nearly as pretty as hers, but they still taste great, and as a bonus, my husband prefers them without icing, so I get away with making at least one batch of 'plain' sugar cookies! 



Simple Sugar Cookies


1 1/2 cups powdered sugar
1 cup softened butter (I use salted butter)
1 egg
2 teaspoons vanilla 
2 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Mix together powdered sugar, butter, egg and vanilla.  Stir in flour, baking soda and cream of tartar.
Cover and refrigerate at least 3 hours.  I usually mix the dough one day and leave it in the fridge overnight and bake the next day.  

Preheat oven to 375.  
Divide dough in half.
Roll out to 3/16 on a lightly floured surface.  
Cut into desired shapes with cookie cutters.
Bake on ungreased cookie sheets until edges are light brown, about 7 to 8 minutes. 
Cool on rack.
Decorate as desired, if you desire!

Note: You can decorate before baking with sprinkles and such if you prefer.  

Decorator Frosting


1 cup sifted powdered sugar
1/2 teaspoon vanilla
1-2 tablespoons water

Mix the above together until smooth and spreadable.  
Add food coloring to obtain desired colors.

Moving Slowly into the Christmas Season

It's taken a while for me to slowly move into the Christmas season this year. Some seasons are like that, it just takes time for it to feel right.

After a busy Thanksgiving followed by some pretty nasty colds/viruses/bacterial infections that ran the gamut through the family, we are slowly recovering and getting into the Christmas spirit.  The tree is up and finally decorated.  One daughter is ordering gifts online, one is crafting away, and one is baking Christmas cookies.   'Tis the season at last.

I love the photo above, with the simplicity of the fresh greenery and the gingerbread cookie reindeer ... Won't work for chairs in my home since we have a big, furry, white dog that would surely eat the cookies as quickly as they were tied on, but I'm thinking maybe cinnamon applesauce ornaments instead and used as a window garland ... or maybe along the mantel

I've got a ton of ideas all tucked away neatly on my Pinterest Christmas board.  I thought you might like to take a look, there might be just the thing you are looking for pinned there.  I'll never make or do all I have collected, but I do love to have lots of options and ideas to choose from.

Scents of Autumn



To bring a touch of autumn sweetness into your home, slice up a lemon and an orange.  Toss them in a pot with a couple of cinnamon sticks, a few star anise, and some cloves.  Add water and simmer on the stove top. Your home will smell delightfully fresh in no time.

Pumpkin Applesauce Muffins

I'm ready for fall.  And though the calendar says it is exactly two weeks away, I'm in denial and pretending it is here right now.  

In the spirit of all things fall, I baked Pumpkin Applesauce Muffins for an afternoon snack.  My middle Love is now eating vegan, so I tweaked a recipe in The Vegetarian Family Cookbook by Nava Atlas. 

Next time I will use gluten free flour as that is my newest adventure, eliminating as much gluten from the diet as possible.  I should have used gluten-free flour today, but I often cook on auto-pilot and I'm still accustomed to grabbing the big flour bin (maybe I'll switch out the contents and put gluten-free flour in it now).  

The muffins are tasty, not too sweet, and definitely fallish in nature.

Pumpkin Applesauce Muffins
vegan

Preheat oven to 350 degrees
Line a 12 cup muffin tin with liners (I had pretty fall ones left from last year)

Stir 1 tablespoon chia seeds into 1/3 cup water (let stand a few minutes to "gel")
If you aren't interested in making this vegan you can substitute an egg for the chia seeds (no water necessary).

In a large bowl combine:

2 cups flour
1/3 cup natural sugar (you may want a tad bit more if you like sweeter muffins)
2 tsp baking powder
1/2 tsp sea salt
1 heaping teaspoon pumpkin pie spice

In another bowl mix together:

chia seed mixture (or 1 egg, lightly beaten)
1 cup pumpkin puree
1 cup applesauce
1/3 cup almond, rice, soy or  "milk" of choice
2 tablespoons cooking oil of choice
1 tsp vanilla

Stir liquid mixture into dry ingredients just until combined.

Optional add-ins:
1/2 cup chopped walnuts
1/2 cup dark chocolate chips
( I used walnuts this time only because someone had eaten all the chocolate chips! Next time I'll add both.)

Bake for 20 minutes or until a wooden pick comes out clean.
Cool on a wire rack.

Enjoy with a cup of your favorite tea!

Summer Soul


Summer is in full swing- just finished a crazy, busy, hectic week of Vacation Bible School for the kids.  I love watching the children having all sorts of fun, but it is overwhelming at the same time for this quiet-loving, introverted mama.

With that behind me, I'm slowing the pace a bit and moving into a quieter rhythm here.  Summer Soul Camp is on my agenda for the next 10 days.  I look forward to spending time creating, crafting, and doing other soul nourishing practices along with the other campers.  Virtual camp is perfect in my book:  go at your own pace, check in with other campers online, do as little or as much as the day allows, take time to reflect and refresh ... summer soul camp. yes.

Simple Beauty


Simple beauty from my back porch- a pink geranium, verbena, and a white trailing flower whose name I forget all tucked into a hanging basket.  These along with the hummingbird feeder which gets frequent visits, and the wind chime in the background, all make me very happy when I look out the window above the kitchen sink.

A Sign of Grace

As I end this write 31 days challenge, the one in which I failed greatly, the words above speak grace to me.  For though I did fail to write here every day in October, I did write, and I did make it a priority to be present in the lives of those I love this month.  Vacations, text message conversations, hours spent talking and laughing with my children.  Daily life, lived in our very messy, often chaotic, 'normal' way of being.  We are a sign of grace when we are fully present right where we are.

The Grace of Giving (and a recipe)


Grace is given to us freely by a loving God.  We extend grace when we freely, joyfully give to others. Giving love, friendship, hospitality, and sharing our own gifts and talents with others are ways we can share grace in today's world.

Since it is October, which means all things pumpkin to me, I'm sharing a recipe for Pumpkin Pie Bars with you today.
I'm thinking I'll bake a batch of these and share them with friends and family along with a note of grace and encouragement.

PUMPKIN PIE BARS


Preheat oven to 375.

Crumb Crust:

1 ½ cups rolled oats
1 ½ cups unbleached flour
¾ cup sugar
½ tsp. baking soda
½ tsp. salt
dash of pumpkin pie spice
¾ cup butter, melted

Combine the above ingredients.
Pat ½ of the mixture into a greased 9×13 inch pan.
Bake 8 minutes.



Filling:

1 15 oz. can pumpkin
2/3 cup milk
1 tsp. pumpkin pie spice
1/2 cup brown sugar
1 egg
1 tsp. vanilla extract (optional)

Blend well. Pour into the crust.
Sprinkle the remaining crust mixture over the top.
Bake 25 minutes .
Cool and then cut into bars.  Refrigerate.
Enjoy!
